Pumpkin spice oatmeal cookie recipe



This is the time of the year for bake sales and bazaars and oatmeal cookies are always a big seller.  Fall will soon be in full swing, the nights are getting cooler and the days sunny and crisp.  One of the best things about fall is the pumpkin spice in almost everything.  I make a mean oatmeal cookie so I figured why not pumpkin spice it up! These cookies are so crisp and tasty and easier to make than cookies from a mix.  The steel cut oats makes a finer oatmeal texture but you can substitute regular oats if desired. Ingredients:

3 cups quick cooking steel cut oats
1 cup flour
½ cup chopped walnuts (optional)
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 cup butter or margarine
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
1 tsp. pumpkin pie spice
¼ tsp. ground cloves
2 eggs

Instructions:

Heat oven to 350 degrees

Mix all ingredients except oats, flour and nuts. 

Stir in oats, flour and nuts.

Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet.  Bake for 9-11 minutes till light brown.  Bake longer if you want a crisper cookie.  Remove and cool on wire rack.
