Quick oven fried pecan crusted chicken fingers

Chicken fingers recipe


Are you looking for a quick, easy recipe for chicken fingers?  And why fry when you can oven fry?  It’s so easy and in 30 minutes you will have a delicious plate of crispy chicken fingers.  Chicken tenders are inexpensive and often on sale so they are thrifty as well as yummy! The addition of pecans gives just a touch of nutty flavor.  Make this recipe on busy nights when you have better things to do than slave in the kitchen and then just sit back and listen to all the complements.

Ingredients:

2 lbs. chicken tenders
2 cups Panko breadcrumbs
1 cup chopped pecans
1 egg, beaten
1 tsp. salt
½ tsp. fresh ground pepper
Dash of poultry seasoning
Light olive oil for cooking
Non- stick foil
Large cookie sheet
Food processor or blender

For dipping sauce:

1 tbsp. honey
1 tbsp. pancake syrup
1 ½ tbsp. spicy brown mustard

Directions:

To make the coating mix, add the panko breadcrumbs and chopped pecans to a food processor or blender and pulse until both are well blended.  Stir in the salt, pepper, and poultry seasoning.

Add each tender to the beaten egg and then dredge in the breading mixture coating both sides.  Set aside. 

Line a large cookie sheet with non-stick foil and coat with a couple tablespoons of light olive oil, spreading it out thinly.  Place the breaded chicken fingers on the prepared cookie sheet leaving space between each of them.

Pre-heat the oven to 400 degrees.  Bake for about 30 minutes, turning them to the other side when halfway done.  Cook until the chicken fingers read 160 degrees on a meat thermometer.

Dipping sauce:

Add the honey, pancake syrup and spicy brown mustard in a small bowl.  Mix well and serve with the chicken.

Recycled dimensional floral magnet

Recycled drink top magnet


You can make this recycled dimensional floral magnet quickly and easily with a plastic top from a juice or iced tea container.  Earth day is coming up on April 22 and recycling and reusing items that would ordinarily end up in a landfill is a big part of loving the earth.  This magnet also uses bits and pieces of flowers and greenery you may have left over from other projects or an old arrangement.  The best part it that this magnet is dimensional and s-oooo adorable.

Supplies:

Top from iced tea or juice container (The one I had was pink from an iced tea bottle although they also come in yellow, blue, etc.)

Mini flowers – plastic centers removed

Mini leaves

Medium flower to fit in center with the plastic center intact

Glue dots

Magnet adhesive back sheet

Scissors

Pencil

Glue gun and glue sticks

Directions:

1.     Place the plastic top on the magnetic sheet and trace around with a pencil.  Cut out to fit the top.  Remove the paper backing from the sheet and attach to the drink top.










2.     Choose 12 mini flowers to fit in the sections on the outside edges of the drink top.  Remove any plastic center so it lays semi flat.  Attach a glue dot on each flower and add to each section of the outside edges.  (See photo)





3.     Choose 6 mini leaves to fit on the inside partitions area of the top.  Add some glue dots on the leaves and attach to each section.  (See photo)




4.     Choose a flower that will fit in the center section of the top.  Cut the plastic center stem flat across so it will stand.   Using a glue gun and glue sticks add an ample amount of glue and immediately stand the flower in the center of the glue.  Hold till it sets.  The flower will be slightly raised dimensionally. 





5.     Use to hold photos, memos and more on your fridge or any metal surface.

And finally, lets talk about dessert. When I was a kid we Greeks would gather in the kitchen and make Easter butter cookies called Koulorakia. They are delicious with coffee or as a treat any time. Not too sweet, buttery and crispy good. The rolling is fun and although I’ve just made them in twists you can make all sorts of shapes, so it’s fun to bake these with your kids. Recycled drink top lucky shamrock magnet tutorial

Recycled shamrock magnet tutorial

Don't throw away that top from the iced tea container, make a recycled drink top lucky shamrock magnet instead and save the planet!  I always save throwaway objects.  And the drink tops that come on iced tea containers are great for crafting.  You can buy shamrock coins in gold or green at the craft store and it fits perfectly in the center.  This recycled magnet is a quick and easy craft that will brighten up your fridge for St. Patrick's Day or any day of the year.  

This makes a great group craft for Girl Scouts or church groups.  Make one or make a bunch, it's fun and easy.  

Supplies:

·      Drink lid from an Iced tea jug

·      Green or gold shamrock coins

·      Adhesive backed magnetic sheet

·      Scissors

·      Pen

·      Tacky glue, glue gun and glue sticks or E6000 glue whichever you prefer

·      Green string beads

Optional:  Tweezers


1.     Wash and dry your drink lid.  Place the drink lid on the adhesive back magnetic sheet and trace around with a pen.  Cut out, remove the paper backing and attach to top of the drink lid. (The top will be the back when it’s a magnet)




2.     Add some glue to the inside center of the drink lid and attach a shamrock coin.  


3.     Run a bead of glue around the inside rim of the lid and attach a piece of green string beads all around.  Use tweezers to get it straight if necessary. Let the glue dry. (See photo)


4.     Run a bead of glue around the outside edge of the lid and add a piece of green string beads all around.  Let the glue dry.
