How to make the yummiest Strawberry shortcake

It used to be that you could only get juicy, delicious strawberries in the spring.  Now you can get them at any time of the year. I usually make them for special birthdays and in my family there are a lot of birthdays in the fall and winter. And everyone loves strawberry shortcake so why deprive yourself of this tasty treat

Even though this is an easy recipe it tastes fabulous for one reason, you just don’t skimp on ingredients. Nothing but real whipped cream and butter will suffice. It is not exactly a diet food I know, but you know what they say about anything in moderation. How to make perfect party size easy mini cheesecakes



If you need a quick dessert for a summer party or get together try these perfect party size quick and easy mini cheesecakes.   Honestly they are so delicious and are just the right size for a snack anytime.
Change up the toppings on your mini cheesecakes to taste.   The fun part is that you can make the basic recipe or get creative and use different extracts or even cut up fresh fruit instead of the canned pie filling.  For the fourth of July use blueberries and strawberries for a red white and blue fun dessert treat!

Ingredients:
  • 12 vanilla wafers
  • 2 8 oz. packages of cream cheese softened. I use Neufchatel for a lighter version
  • ½ cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 22 oz. can berry medley pie filling and topping (or topping of choice)
  • Foil cupcake liners
  • Muffin pan

Quick and easy mini cheesecakes (Makes 12)

Place one vanilla wafer in each liner and insert into the muffin pan. Using an electric mixer, mix cream cheese vanilla and sugar on medium speed till well blended.
Add eggs to the mixture and continue to mix well.
Pour mixture into each prepared cupcake liner with vanilla wafer. Fill till ¾ of the way full.
Preheat oven to 325 degrees and bake for 25 minutes.
Remove from pan when cool. Chill and then top with a spoonful of pie filling. Other topping choices are nuts, chocolate chips or preserves, chopped fresh fruit, berries, caramel ice cream topping or chocolate topping. Be creative.
