Potato Pancake recipe

It’s no secret that I love potatoes.   I love them mashed, baked, fried and boiled.  When I was a kid I would crush my mini bags of potato chips so I could eat the tiny pieces that way the bag would last longer.  I know, I was a weird kid.  I kind of steer clear of the chips these days and if I do treat myself I leave them whole.

If you love potatoes then you will love these delicious potato pancakes. They are good anytime of the day whether it’s breakfast, lunch, or dinner.  Pair them with crisp bacon and some applesauce or baked apple slices on the side top them with butter and enjoy.

Breast Cancer Awareness Key chain tutorial

Breast cancer awareness key chain

October is Breast Cancer Awareness month and this recycled cork key chain is the perfect gift for a survivor or to show your support.  It’s quick and easy to make using an upcycled champagne cork to create a cute key chain.

Supplies:

·      Recycled champagne cork
·      Pink acrylic paint
·      Small paintbrush
·      10” 7/8” wide pink grosgrain ribbon - lighter or clear nail polish to seal the ends
·      2 inches 22 gauge pink wire
·      Wire cutter
·      Needle nosed pliers
·      Large hole wooden bead
·      Two eye screws
·      Pink key ring

Instructions:

1.     Use a small paintbrush to paint sections of the cork with paint.  Since the cork is composed of many little sections, you can pick and choose small areas to paint within the cork lines.  The bottom of the cork is smoother so paint the bottom solid.  (See photo)  Let dry.

Pumpkin spice oatmeal cookie recipe

This is the time of the year for bake sales and bazaars and oatmeal cookies are always a big seller.  Fall will soon be in full swing, the nights are getting cooler and the days sunny and crisp.  One of the best things about fall is the pumpkin spice in almost everything.  I make a mean oatmeal cookie so I figured why not pumpkin spice it up! These cookies are so crisp and tasty and easier to make than cookies from a mix.  The steel cut oats makes a finer oatmeal texture but you can substitute regular oats if desired. Be sure to join Bowdabra blog and Make it easy crafts next week for more dinner easy recipes.  These cookies make a great on the go breakfast too!

Ingredients:

3 cups quick cooking steel cut oats
1 cup flour
½ cup chopped walnuts (optional)
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 cup butter or margarine
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1 tsp. vanilla
1 tsp. pumpkin pie spice
¼ tsp. ground cloves
2 eggs

Instructions:

Heat oven to 350 degrees

Mix all ingredients except oats, flour and nuts.

Stir in oats, flour and nuts.
